  • 6 piece Eggs
  • 2 medium Zucchini
  • 1 medium Red Bell Pepper
  • 1 cup Cherry Tomatoes
  • 2 tablespoon Fresh Basil
  • 2 tablespoon Parmesan Cheese
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, whisk the eggs.
  3. Slice the zucchini, red bell pepper, and cherry tomatoes.
  4. Heat olive oil in a skillet over medium heat.
  5. Add the sliced vegetables and cook until tender.
  6. Season with salt and black pepper.
  7. Pour the whisked eggs over the vegetables in the skillet.
  8. Sprinkle with fresh basil and grated Parmesan cheese.
  9. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the eggs are set.
  10. Remove from the oven and let it rest for 5 minutes before serving.
