Ingredients
  • 4 medium Zucchini
  • 1 cup Rice
  • 1 medium Onion
  • 2 medium Tomato
  • 2 clove Garlic
  • 4 tablespoon Parsley
  • 4 tablespoon Olive oil
  • 2 tablespoon Pine nuts
  • 1 teaspoon Dried mint
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 cup Water
Instructions
  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops of the zucchinis and scoop out the flesh, leaving a shell.
  3. In a pan, heat olive oil and sauté chopped onion and garlic until translucent.
  4. Add rice, dried mint, dried oregano, salt, and black pepper to the pan. Cook for 2-3 minutes.
  5. Stir in chopped tomatoes, pine nuts, and parsley. Cook for another 2-3 minutes.
  6. Fill the zucchini shells with the rice mixture and place them in a baking dish.
  7. Pour water into the dish and cover it with aluminum foil.
  8. Bake for 40 minutes.
  9. Remove the foil and bake for an additional 5 minutes to brown the tops.
  10. Let it rest for 10 minutes before serving.
