Strawberry-White Chocolate Napoleons

Preheat the oven to 400°F (200°C).

Roll out the puff pastry sheets and cut each into 9 equal rectangles.

Place the rectangles on a baking sheet lined with parchment paper and bake for 10-12 minutes or until golden brown.

In a heatproof bowl, melt the white chocolate over a pan of simmering water. Set aside to cool slightly.

In a separate bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract while continuing to whip.

Once the puff pastry rectangles have cooled, spread a layer of melted white chocolate on half of them.

Top the chocolate-covered rectangles with a dollop of whipped cream and sliced strawberries.

Place the remaining puff pastry rectangles on top to create a sandwich.

Dust with powdered sugar and garnish with mint leaves.

Let the napoleons rest in the refrigerator for at least 1 hour before serving.
