Ingredients
  • 2 cup All-purpose flour
  • 1/2 cup Granulated sugar
  • 2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Milk
  • 1/4 cup Vegetable oil
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 1/2 cup Fresh strawberries
  • 4 ounce Cream cheese
  • 1/4 cup Powdered sugar
Instructions
  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. In a separate bowl, mash the strawberries with a fork until chunky.
  6. Gently fold the mashed strawberries into the muffin batter.
  7. In a small bowl, mix together the cream cheese and powdered sugar until smooth.
  8. Spoon the muffin batter into the prepared muffin tin, filling each cup halfway.
  9. Drop a spoonful of the cream cheese mixture onto each muffin and swirl with a toothpick.
  10. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
