Wash and hull the strawberries.

In a mixing bowl, combine the cream cheese, powdered sugar, and vanilla extract. Mix until smooth.

Take a strawberry and slice off the bottom to create a flat surface.

Cut a small hole in the top of the strawberry, about halfway down, and remove the stem.

Fill the hole with the cream cheese mixture.

Dip the cream cheese-filled strawberry into the graham cracker crumbs, coating the bottom.

Place the strawberry on a serving platter.

Repeat with the remaining strawberries.

Refrigerate for 30 minutes to allow the cream cheese filling to set.
