  1. Wash and hull the strawberries.
  2. In a mixing bowl, combine the cream cheese, powdered sugar, and vanilla extract. Mix until smooth.
  3. Take a strawberry and slice off the bottom to create a flat surface.
  4. Cut a small hole in the top of the strawberry, about halfway down, and remove the stem.
  5. Fill the hole with the cream cheese mixture.
  6. Dip the cream cheese-filled strawberry into the graham cracker crumbs, coating the bottom.
  7. Place the strawberry on a serving platter.
  8. Repeat with the remaining strawberries.
  9. Refrigerate for 30 minutes to allow the cream cheese filling to set.
  10. Serve chilled and enjoy!
