  1. In a mixing bowl, cream together butter and sugar until light and fluffy.
  2. Add the egg and vanilla extract, and mix until well combined.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the butter mixture, alternating with milk, until a soft dough forms.
  5. Divide the dough into two portions. Add food coloring to one portion if desired.
  6. Wrap both portions of dough in plastic wrap and refrigerate for 30 minutes.
  7. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  8. Take a small portion of each dough and roll them into balls. Place the balls on the prepared baking sheet, spacing them apart.
  9. Bake for 12 minutes, or until the edges are lightly golden.
  10. Remove from the oven and let the cookies cool completely on a wire rack.
  11. Once cooled, spread whipped cream on the bottom side of one cookie and sandwich it with the bottom side of another cookie.
