Ingredients
  • 2 cup Yellow Squash
  • 2 cup Broccoli Florets
  • 1 medium Onion
  • 2 clove Garlic
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 cup Cheddar Cheese
  • 0.5 cup Breadcrumbs
  • 2 tablespoon Fresh Parsley
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Slice the yellow squash, chop the onion, and mince the garlic.
  3. In a large skillet, heat olive oil over medium heat. Add the onion and garlic, and sauté until fragrant.
  4. Add the sliced yellow squash and broccoli florets to the skillet. Cook for about 5 minutes, until the vegetables are slightly tender.
  5. Season with salt and black pepper, then transfer the mixture to a greased casserole dish.
  6. Sprinkle cheddar cheese and breadcrumbs on top of the vegetables.
  7. Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
  8. Remove from the oven and let it rest for 10 minutes.
  9. Garnish with fresh parsley before serving.
