Ingredients
  • 500 gram Potatoes
  • 150 gram Flour
  • 2 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 100 gram Cheddar Cheese
  • 1/2 cup Green Onions
  • 2 unit Eggs
  • 1/2 cup Milk
  • 2 tablespoon Butter
  • 4 slice Bacon
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Peel and grate the potatoes. Squeeze out any excess moisture.
  3. In a large bowl, combine the grated potatoes, flour, baking powder, salt, and black pepper.
  4. Stir in the grated cheddar cheese and chopped green onions.
  5. In a separate bowl, whisk together the eggs, milk, and melted butter.
  6. Pour the egg mixture into the potato mixture and stir until well combined.
  7. Grease a muffin tin and divide the potato mixture evenly among the cups.
  8. Top each muffin with a slice of bacon.
  9. Bake for 20-25 minutes, or until the muffins are golden brown and cooked through.
  10. Remove from the oven and let cool for 5 minutes before serving.
