  2. Wash and scrub the potatoes. Pierce each potato several times with a fork.
  3. Place the potatoes on a baking sheet and bake for 45-60 minutes, or until tender.
  4. While the potatoes are baking, cook the spinach in a pan with a little water until wilted. Drain any excess water.
  5. Once the potatoes are cool enough to handle, slice off the top of each potato and scoop out the flesh into a bowl, leaving a thin shell.
  6. Mash the potato flesh with butter, sour cream, salt, and black pepper. Stir in the cooked spinach and grated cheddar cheese.
  7. Spoon the potato mixture back into the potato shells.
  8. Place the filled potatoes back on the baking sheet and bake for an additional 15 minutes, or until the cheese is melted and the tops are slightly golden.
