In a food processor, combine the flour, butter, and a pinch of salt. Pulse until the mixture resembles coarse crumbs. Add the cold water and pulse until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.

In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened. Add the mushrooms and cook until they release their liquid. Add the spinach and cook until wilted. Season with salt and black pepper.
