Ingredients
  • 200 gram Spinach
  • 2 cup Buttermilk
  • 1 medium Onion
  • 2 clove Garlic
  • 2 tablespoon Olive Oil
  • 4 cup Vegetable Stock
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until onion becomes translucent.
  2. Add spinach and cook until wilted.
  3. Pour in vegetable stock and bring to a boil. Reduce heat and simmer for 10 minutes.
  4. Remove from heat and let it cool slightly. Blend the soup until smooth using a blender or immersion blender.
  5. Return the soup to the pot and stir in buttermilk. Season with salt and black pepper.
  6. Heat the soup over low heat for 5 minutes, stirring occasionally.
  7. Serve hot and enjoy!
