  1. Preheat the oven to 375°F (190°C).
  2. Cut the butternut squash in half lengthwise and remove the seeds. Place the squash halves on a baking sheet, cut side down, and roast in the oven for about 45 minutes or until the squash is tender. Let it cool, then scoop out the flesh and mash it.
  3. In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  4. In a separate bowl, beat the eggs, brown sugar, vegetable oil, milk, and vanilla extract.
  5. Add the mashed butternut squash to the wet ingredients and mix well.
  6. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  7. Spoon the batter into a greased muffin tin, filling each cup about 2/3 full.
  8. Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  9. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
