Ingredients
  • 500 gram Potatoes
  • 1 piece Red bell pepper
  • 1 cup Corn kernels
  • 1 cup Black beans
  • 1 piece Red onion
  • 0.5 cup Cilantro
  • 2 tablespoon Lime juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Cumin
  • 0.5 teaspoon Smoked paprika
  • 1 piece Avocado
Instructions
  1. Boil the potatoes until tender. Drain and let cool.
  2. In a large bowl, combine the diced red bell pepper, corn kernels, black beans, finely chopped red onion, and chopped cilantro.
  3. In a small bowl, whisk together the lime juice, olive oil, salt, black pepper, cumin, and smoked paprika.
  4. Cut the cooled potatoes into bite-sized pieces and add them to the bowl with the vegetables.
  5. Pour the dressing over the potato mixture and gently toss to combine.
  6. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  7. Before serving, garnish the potato salad with sliced avocado.
