  • 2 pound Potatoes
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 medium Red Bell Pepper
  • 1 cup Corn Kernels
  • 1 cup Black Beans
  • 4 cups Vegetable Broth
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 cup Heavy Cream
  • 1 cup Cheddar Cheese
  • 2 tablespoons Fresh Cilantro
  • 4 wedge Lime
Instructions
  1. Peel and dice the potatoes, onion, and garlic.
  2. In a large pot, heat some oil over medium heat and sauté the onion and garlic until fragrant.
  3. Add the diced potatoes and cook for a few minutes.
  4. Add the red bell pepper, corn kernels, black beans, vegetable broth, cumin, chili powder, salt, and black pepper.
  5. Bring the mixture to a boil, then reduce the heat and simmer for about 20 minutes or until the potatoes are tender.

  7. Stir in the heavy cream and cheddar cheese until melted and well combined.
