Ingredients
  • 1 can Black beans
  • 1 cup Corn kernels
  • 1 medium Red bell pepper
  • 1 medium Yellow bell pepper
  • 1 small Red onion
  • 2 clove Garlic cloves
  • 1 cup Cherry tomatoes
  • 1 medium Jalapeno pepper
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup Cheddar cheese
  • 2 tablespoon Fresh cilantro
  • 2 tablespoon Olive oil
  • 1 cup Tortilla chips
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the black beans, corn kernels, diced red bell pepper, diced yellow bell pepper, diced red onion, minced garlic cloves, halved cherry tomatoes, diced jalapeno pepper, ground cumin, chili powder, salt, and black pepper. Mix well.
  3. Transfer the mixture to a baking dish and spread it evenly.
  4. Sprinkle the grated cheddar cheese on top.
  5. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  6. Remove from the oven and let it rest for 5 minutes.
  7. Garnish with fresh cilantro.
  8. Serve with tortilla chips.
