  4. Beat in the egg and vanilla extract.
  5. Gradually mix in the dry ingredients, alternating with the milk.
  6. Fill each cupcake liner halfway with the batter.
  7. Spoon a dollop of peanut butter and strawberry jelly onto each cupcake.
  8. Top with more batter to cover the filling.
  9. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the cupcakes to cool completely before serving.
