Snickerdoodle cookies are believed to have originated in New England and are characterized by their cinnamon-sugar coating.

In a large bowl, cream together the butter and sugar until light and fluffy.

Beat in the egg and vanilla extract.

In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients and mix until well combined.

Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

On a lightly floured surface, roll out one disk of dough into a rectangle about 1/4 inch thick.

In a small bowl, mix together the sugar and cinnamon. Sprinkle half of the mixture evenly over the rolled out dough.

Starting from one long side, tightly roll up the dough into a log.

Repeat steps 7-9 with the remaining dough.

Slice each log into 1/2 inch thick slices and place them on the prepared baking sheet.

Bake for 10-12 minutes, or until the edges are lightly golden.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
