Ingredients
  • 200 gram Butter
  • 100 gram Granulated sugar
  • 1 unit Egg
  • 2 teaspoon Lemon zest
  • 2 tablespoon Lemon juice
  • 300 gram All-purpose flour
  • 1/2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 50 gram Powdered sugar
Instructions
  1. In a bowl, cream together butter and granulated sugar until light and fluffy.
  2. Beat in the egg, lemon zest, and lemon juice.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Divide the dough in half and shape each half into a log. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  5. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  6. Slice the chilled dough logs into 1/4-inch thick slices and place on the prepared baking sheet.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
