  • 1 cup Barley or Brown Rice
  • 2 tablespoon Olive Oil
  • 1 medium Onion
  • 2 clove Garlic
  • 1 pound Mushrooms
  • 1 bunch Chard
  • 1 cup Vegetable Broth
  • 1 tablespoon Soy Sauce
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 4 tablespoon Parmesan Cheese
Instructions
  1. Cook the barley or brown rice according to package instructions.
  2. Heat olive oil in a skillet over medium heat.
  3. Add onion and garlic, sauté until fragrant.
  4. Add mushrooms and cook until browned.
  5. Stir in chard and cook until wilted.
  6. Pour in vegetable broth and soy sauce, simmer for 10 minutes.
  7. Season with salt and black pepper.
  8. Serve the mushroom and chard mixture over cooked barley or brown rice.
  9. Sprinkle with Parmesan cheese.
  10. Let it rest for 5 minutes before serving.
