Ingredients
  • 4 medium-sized Beets
  • 1 cup Farro
  • 2 cup Baby spinach
  • 1 small Red onion
  • 2 ounce Feta cheese
  • 1/4 cup Walnuts
  • 2 tablespoon Olive oil
  • 2 tablespoon Balsamic vinegar
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Trim and peel the beets, then cut them into small wedges.
  3. Toss the beets with 1 tablespoon of olive oil, salt, and black pepper.
  4. Place the beets on a baking sheet and roast in the preheated oven for 25-30 minutes, or until tender.
  5. In a saucepan, cook the farro according to package instructions.
  6. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced red onion and cook until softened.
  7. In a large bowl, combine the roasted beets, cooked farro, sautéed red onion, baby spinach, crumbled feta cheese, and chopped walnuts.
  8. Drizzle with balsamic vinegar and toss gently to combine.
  9. Let the salad rest for 10 minutes to allow the flavors to meld.
  10. Serve the skillet beet and farro salad warm or at room temperature.
