  2. In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.
  3. In a large bowl, beat the cream cheese until smooth. Add the sour cream, sugar, and vanilla extract, and beat until well combined.
  4. Add the eggs one at a time, beating well after each addition.
  5. Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.
  6. Bake for 60 minutes, or until the center is set and the top is lightly browned.
  7. Remove from the oven and let the cheesecake cool in the pan for 10 minutes.
  8. Run a knife around the edge of the pan to loosen the cheesecake, then remove the sides of the springform pan.
  9. Let the cheesecake cool completely, then refrigerate for at least 2 hours or overnight before serving.
