  • 300 gram Potatoes
  • 100 gram Spinach
  • 100 gram Kale
  • 100 gram Chard
  • 100 gram Broccoli
  • 50 gram Spring Onions
  • 50 gram Peas
  • 6 unit Eggs
  • 100 milliliter Milk
  • 50 gram Cheddar Cheese
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Olive Oil
Instructions
  1. Preheat the oven to 180°C (350°F).
  2. Peel and slice the potatoes into thin rounds.
  3. Heat olive oil in a large frying pan over medium heat and fry the potato slices until golden brown.
  4. In a separate bowl, whisk together the eggs, milk, salt, and black pepper.
  5. Add the spinach, kale, chard, broccoli, spring onions, and peas to the pan with the potatoes.
  6. Pour the egg mixture over the vegetables and cook for a few minutes until the edges start to set.
  7. Sprinkle cheddar cheese on top and transfer the pan to the preheated oven.
  8. Bake for about 20 minutes or until the frittata is set and golden.
  9. Remove from the oven and let it rest for 5 minutes before serving.
  10. Cut into wedges and serve warm.
