In a large bowl, combine Rice Krispies, peanut butter, honey, powdered sugar, vanilla extract, and salt. Mix well until all ingredients are evenly incorporated.

Shape the mixture into small truffle-sized balls and place them on a parchment-lined baking sheet.

In a microwave-safe bowl, melt the chocolate chips and butter together in 30-second intervals, stirring in between, until smooth.

Dip each truffle ball into the melted chocolate, coating it completely. Use a fork to lift the truffle out of the chocolate, allowing any excess to drip off.

Return the coated truffles to the baking sheet and let them set at room temperature for about 1 hour, or until the chocolate hardens.

Once the chocolate has hardened, transfer the Scotcheroo Truffles to an airtight container and store in the refrigerator until ready to serve.
