  1. Boil the potatoes until tender. Drain and let cool.
  2. Peel and finely chop the onion.
  3. In a large bowl, mash the potatoes until smooth.
  4. In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the chopped onion and cook until translucent.
  5. Add the cooked onion, all-purpose flour, salt, and black pepper to the mashed potatoes. Mix well.
  6. Preheat the oven to 375°F (190°C).
  7. Roll out the dough on a floured surface to a thickness of about 1/4 inch.
  8. Cut the dough into squares or rectangles, approximately 4x4 inches.
  9. Place a spoonful of the potato mixture onto each piece of dough.
  10. Fold the dough over the filling and pinch the edges to seal.
  11. Place the knishes on a baking sheet lined with parchment paper.
  12. Beat the egg in a small bowl and brush it over the knishes.
  13. Bake for 25-30 minutes, or until golden brown.
  14. Let the knishes cool for a few minutes before serving.
