Ingredients
  • 2 cup All-purpose flour
  • 1/4 cup Unsweetened cocoa powder
  • 1/2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter, softened
  • 3/4 cup Granulated sugar
  • 1 unit Egg
  • 1/2 teaspoon Vanilla extract
  • 2 tablespoon Milk
  • 1 cup Semi-sweet chocolate, chopped
  • 1/2 cup Heavy cream
Instructions
  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a separate large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined.
  5. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Flatten each dough ball slightly with the bottom of a glass.
  6. Bake for 10-12 minutes, or until the edges are set. Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.
  7. Meanwhile, make the chocolate ganache filling. Place the chopped chocolate in a heatproof bowl. In a small saucepan, heat the heavy cream until it just begins to simmer. Pour the hot cream over the chocolate and let it sit for 2 minutes. Stir until smooth and creamy.
  8. Once the cookies are completely cooled, spread a generous amount of chocolate ganache on the bottom side of one cookie and sandwich it with another cookie, bottom side down.
  9. Allow the sandwich cookies to rest for 30 minutes to allow the ganache to set. Enjoy!
