  1. In a large bowl, combine flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Gradually add water, tossing with a fork until dough forms a ball.
  2. On a lightly floured surface, roll out dough into a 12-inch circle. Transfer to a parchment-lined baking sheet.
  3. In a separate bowl, combine nectarines, mixed berries, cornstarch, lemon juice, and vanilla extract. Toss gently to combine.
  4. Spoon fruit mixture onto the center of the dough, leaving a 2-inch border. Fold edges of dough over filling, pleating as necessary.
  5. Brush the edges of the dough with beaten egg. Bake at 375°F (190°C) for 35-40 minutes or until crust is golden brown and fruit is tender.
  6. Allow the tart to cool for at least 1 hour before serving. Dust with powdered sugar, if desired.
