Ingredients
  • 1 cup All-purpose flour
  • 2 tablespoon Granulated sugar
  • 2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 2 Eggs
  • 1 cup Milk
  • 2 tablespoon Unsalted butter, melted
  • 1 cup Cream cheese, softened
  • 1/4 cup Powdered sugar
  • 2 teaspoon Lemon zest
  • 2 tablespoon Lemon juice
  • 1/2 teaspoon Vanilla extract
  • 1 cup Fresh berries
  • 4 tablespoon Maple syrup
Instructions
  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, beat the eggs, milk, and melted butter.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  4. In another bowl, beat the cream cheese, powdered sugar, lemon zest, lemon juice, and vanilla extract until smooth.
  5. Heat a non-stick pan over medium heat and lightly grease with butter.
  6. Pour 1/4 cup of the pancake batter onto the pan and spread it into a circle.
  7. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  8. Repeat with the remaining batter.
  9. Serve the pancakes topped with a dollop of the lemon cheesecake mixture, fresh berries, and a drizzle of maple syrup.
