Slice the tomatoes into thick slices.

Place the tomato slices on a baking sheet and drizzle with olive oil. Season with salt and pepper.

Roast the tomatoes in the preheated oven for 15-20 minutes, or until they are soft and slightly caramelized.

While the tomatoes are roasting, spread butter on one side of each slice of bread.

Place 2 slices of bread, butter side down, in a skillet over medium heat.

Top each slice of bread with a slice of cheddar cheese.

Top with the remaining slices of bread, butter side up.
