Ingredients
  • 4 head Endives
  • 2 cup Mushrooms
  • 2 tablespoon Olive oil
  • 2 clove Garlic
  • 2 sprig Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Trim the endives and cut them in half lengthwise. Remove any wilted outer leaves.
  3. In a large bowl, toss the endives, mushrooms, olive oil, garlic, thyme, salt, and black pepper until well coated.
  4. Transfer the mixture to a baking dish and spread it out in an even layer.
  5. Roast in the preheated oven for 20-25 minutes, or until the endives are tender and lightly browned.
  6. Remove from the oven and let rest for 5 minutes before serving.
  7. Serve as a side dish or as an appetizer.
