Delicata squash is also known as sweet potato squash due to its creamy texture and sweet flavor.

Preheat the oven to 400°F (200°C).

Cut the delicata squash in half lengthwise, remove the seeds, and slice into 1/4-inch thick half-moons.

Toss the delicata squash slices with olive oil, salt, and black pepper.

Arrange the slices on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.

While the squash is roasting, slice the baguette into 1/2-inch thick slices.

Brush the baguette slices with olive oil and toast in the oven for 5-7 minutes, or until golden brown.

Spread goat cheese on each toasted baguette slice.

Top with a roasted delicata squash slice.

Drizzle with honey and sprinkle with fresh thyme leaves.
