  • 1.5 cup All-purpose flour
  • 0.75 cup Granulated sugar
  • 2 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter, melted
  • 0.5 cup Milk
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 cup Blueberries
  • 2 tablespoon Powdered sugar (for dusting)
Instructions
  1. In a large bowl, combine the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the melted butter, milk, eggs, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Gently fold in the blueberries.
  5. Grease the rice cooker pot with butter or cooking spray.
  6. Pour the batter into the rice cooker pot and smooth the top.
  7. Close the rice cooker lid and set it to the cake or bake function.
  8. Cook for approximately 45 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the cake rest in the rice cooker for 10 minutes before removing.
  10. Carefully invert the pot onto a serving plate to release the cake.
  11. Dust with powdered sugar before serving.
