Ingredients
  • 2 cup Rice
  • 2 cup Vegetable broth
  • 1 medium Onion
  • 2 clove Garlic
  • 1 medium Bell pepper
  • 1 cup Frozen mixed vegetables
  • 1 can Canned diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Shredded cheese
  • 1 tablespoon Fresh parsley
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large oven-safe skillet, sauté the onion, garlic, and bell pepper until softened.
  3. Add the rice and cook for another 2 minutes, stirring occasionally.
  4. Stir in the vegetable broth, diced tomatoes, frozen mixed vegetables, Italian seasoning, salt, and black pepper.
  5. Bring the mixture to a boil, then cover and transfer to the preheated oven.
  6. Bake for 30 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Remove from the oven and sprinkle the shredded cheese on top.
  8. Return to the oven for another 5 minutes, or until the cheese is melted and bubbly.
  9. Let the casserole rest for 10 minutes before serving.
  10. Garnish with fresh parsley and enjoy!
