Rice and Spinach Soup

Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until translucent.

Add rice and stir for a minute to coat it with the oil.

Pour in vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.

Meanwhile, wash and chop the spinach.

After 15 minutes, add the spinach to the pot and stir well. Cook for another 5 minutes until the spinach wilts.

Season with salt and black pepper to taste.

Remove from heat and let it rest for 5 minutes before serving.
