  2. Cut the rhubarb into small pieces and cook with 50g of granulated sugar over medium heat until soft. Let it cool.
  3. In a clean bowl, beat the egg whites until stiff peaks form. Gradually add the remaining granulated sugar while continuing to beat.
  4. Gently fold in the vanilla extract, cornstarch, and lemon juice.
  5. Spoon the meringue mixture onto a baking tray lined with parchment paper, creating small nests.
  6. Bake for 2 hours, then turn off the oven and let the meringues cool inside for 30 minutes.
  7. Once cooled, fill the meringue nests with the cooked rhubarb.
  8. Dust with powdered sugar before serving.
