Ingredients
  • 500 stalks Rhubarb
  • 1 cup Cranberries
  • 1 cup Granulated Sugar
  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted Butter
  • 1/2 cup Milk
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Powdered Sugar
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a saucepan, combine the rhubarb, cranberries, and granulated sugar. Cook over medium heat until the rhubarb is tender and the cranberries burst, stirring occasionally. Remove from heat and let cool.
  3. In a mixing bowl, whisk together the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  4. Stir in the milk and vanilla extract until the dough comes together.
  5. On a floured surface, roll out the dough into a rectangle. Spread the cooled rhubarb cranberry filling evenly over the dough.
  6. Roll up the dough tightly, starting from one of the long sides. Cut the roll into 6 equal slices.
  7. Place the slices on a baking sheet lined with parchment paper. Bake for 25 minutes or until golden brown.
  8. Remove from the oven and let cool for 10 minutes.
  9. Dust with powdered sugar before serving.
