Ingredients
  • 2 cup Rhubarb
  • 2 cup All-purpose flour
  • 1 cup Granulated sugar
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter
  • 1 Egg
  • 1/2 cup Milk
  • 1 teaspoon Vanilla extract
  • 1/2 cup Brown sugar
  • 1/2 teaspoon Cinnamon
  • 1/4 cup Chopped nuts (optional)
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch square baking pan.
  2. In a mixing bowl, combine the rhubarb, granulated sugar, and cinnamon. Set aside.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. In a large mixing bowl, cream the butter and sugar until light and fluffy. Beat in the egg, milk, and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Spread half of the batter into the prepared baking pan. Top with the rhubarb mixture.
  7. Drop spoonfuls of the remaining batter over the rhubarb mixture. Sprinkle with brown sugar and chopped nuts, if desired.
  8. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the coffeecake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  10. Serve and enjoy!
