Ingredients
  • 1 cup Rolled oats
  • 1 cup Whole wheat flour
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Ground cinnamon
  • 1/2 cup Unsweetened applesauce
  • 1/4 cup Honey
  • 1/4 cup Reduced-fat margarine
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 1/2 cup Dried cranberries
  • 1/4 cup Chopped walnuts
Instructions
  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine the rolled oats, whole wheat flour, baking powder, salt, and ground cinnamon.
  3. In a separate large bowl, mix together the unsweetened applesauce, honey, reduced-fat margarine, egg, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until well combined.
  5. Fold in the dried cranberries and chopped walnuts.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are golden brown.
  8. Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
