Ingredients
  • 4 onion Red onions
  • 2 tablespoon Butter
  • 2 tablespoon Flour
  • 4 cup Vegetable broth
  • 1 teaspoon Thyme
  • 1 piece Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 slice Bread slices
  • 4 ounce Gruyere cheese
Instructions
  1. Slice the red onions.
  2. Melt butter in a large pot over medium heat.
  3. Add the sliced onions and cook until caramelized, about 15 minutes.
  4. Sprinkle flour over the onions and stir well.
  5. Pour in the vegetable broth and add thyme, bay leaf, salt, and black pepper.
  6. Bring the soup to a boil, then reduce heat and simmer for 20 minutes.
  7. While the soup is simmering, preheat the oven to 400°F (200°C).
  8. Place the bread slices on a baking sheet and top each slice with grated Gruyere cheese.
