Ingredients
  • 2 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter, melted
  • 1 cup Granulated sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 cup Crushed pineapple, drained
  • 2 tablespoon Powdered sugar, for dusting
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the melted butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the crushed pineapple.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let the loaf cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  8. Once cooled, dust the top with powdered sugar before serving.
