Ingredients
  • 1.5 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter, softened
  • 1 cup Granulated sugar
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 1/2 cup Milk
  • 1/2 cup Fresh strawberries, pureed
  • 2 cup Powdered sugar
  • 12 Fresh strawberries, sliced
Instructions
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk.
  6. Fold in the pureed strawberries.
  7. Fill each cupcake liner about 2/3 full with the batter.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cupcakes to cool completely.
  10. In a small bowl, whisk together the powdered sugar and enough strawberry puree to make a smooth glaze.
  11. Drizzle the glaze over the cooled cupcakes.
  12. Top each cupcake with a sliced strawberry.
