Ingredients
  • 200 gram Digestive biscuits
  • 100 gram Butter
  • 200 gram Cream cheese
  • 100 gram Icing sugar
  • 1 teaspoon Vanilla extract
  • 200 ml Double cream
  • 200 gram Fresh raspberries
Instructions
  1. Crush the digestive biscuits and mix with melted butter.
  2. Press the mixture into the bottom of serving pots.
  3. In a separate bowl, beat the cream cheese, icing sugar, and vanilla extract until smooth.
  4. In another bowl, whip the double cream until soft peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture.
  6. Spoon the mixture over the biscuit base in the serving pots.
  7. Top with fresh raspberries.
  8. Refrigerate for at least 3 hours to set.
  9. Serve chilled.
