  • 8 ounce Ramen noodles
  • 2 cup Spinach
  • 1 cup Cherry tomatoes
  • 1 cup Cucumber
  • 1 cup Red bell pepper
  • 0.5 cup Green onions
  • 2 teaspoon Sesame seeds
  • 2 tablespoon Olive oil
  • 2 tablespoon Soy sauce
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Honey
  • 1 clove Garlic
  • 1 teaspoon Ginger
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Cook the ramen noodles according to package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked ramen noodles, spinach, cherry tomatoes, cucumber, red bell pepper, and green onions.
  3. In a small bowl, whisk together the olive oil, soy sauce, rice vinegar, honey, garlic, ginger, salt, and black pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Sprinkle sesame seeds on top.
  6. Let the salad rest for 5 minutes before serving.
