Ingredients
  • 1 cup Quinoa
  • 2 cup Water
  • 1 tablespoon Olive oil
  • 1 small Red onion
  • 1 medium Bell pepper
  • 1 medium Zucchini
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 0.5 cup Fresh parsley
  • 2 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Rinse quinoa under cold water.
  2. In a saucepan, bring water to a boil and add quinoa. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  3. In a large skillet, heat olive oil over medium heat. Add red onion, bell pepper, and zucchini. Sauté for 5 minutes or until vegetables are tender.
  4. In a large bowl, combine cooked quinoa, sautéed vegetables, cherry tomatoes, cucumber, fresh parsley, lemon juice, salt, and black pepper. Mix well.
  5. Let the salad rest for 5 minutes to allow flavors to blend. Serve and enjoy!
