Ingredients
  • 1 cup Quinoa
  • 2 medium Beets
  • 1 small Red onion
  • 1 medium Cucumber
  • 1 cup Feta cheese
  • 2 tablespoon Fresh parsley
  • 2 tablespoon Lemon juice
  • 3 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Cook quinoa according to package instructions.
  2. Preheat the oven to 400°F (200°C).
  3. Wrap beets in aluminum foil and roast for 40 minutes, or until tender. Let cool, then peel and dice.
  4. In a large mixing bowl, combine cooked quinoa, diced beets, chopped red onion, diced cucumber, crumbled feta cheese, chopped fresh parsley, lemon juice, olive oil, salt, and black pepper.
  5. Mix well and let the salad rest for 10 minutes to allow the flavors to blend.
  6. Serve chilled and enjoy!
