Ingredients
  • 1 cup Quinoa
  • 2 cup Water
  • 1 large Egg
  • 1 cup Tomato sauce
  • 1 cup Mozzarella cheese
  • 1 cup Cherry tomatoes
  • 1 cup Black olives
  • 1 cup Fresh basil leaves
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Pepper
Instructions
  1. Preheat the oven to 375°F (190°C). Boil the quinoa in water for 10-15 minutes or until tender. Drain any excess water.
  2. In a mixing bowl, combine the cooked quinoa, egg, Italian seasoning, salt, and pepper. Mix well.
  3. Grease a muffin tin and divide the quinoa mixture evenly among the cups. Press the mixture down to form a crust.
  4. Bake the quinoa crust for 15 minutes or until golden brown.
  5. Remove the crust from the oven and let it cool for a few minutes. Then, carefully remove the crust from the muffin tin.
  6. Spread tomato sauce on top of each quinoa crust. Top with mozzarella cheese, cherry tomatoes, black olives, and fresh basil leaves.
  7. Place the muffin tin back in the oven and bake for an additional 10 minutes or until the cheese has melted.
  8. Remove the quinoa pizza muffins from the oven and let them cool for a few minutes before serving.
