Ingredients
  • 1.5 cup Graham cracker crumbs
  • 0.5 cup Butter, melted
  • 2 package Cream cheese, softened
  • 0.75 cup Granulated sugar
  • 2 tablespoon Lemon juice
  • 1 teaspoon Lemon zest
  • 1 teaspoon Vanilla extract
  • 2 large Eggs
  • 1 cup Blueberries
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a greased 9x9 inch baking dish.
  3. In a large mixing bowl, beat cream cheese, sugar, lemon juice, lemon zest, and vanilla extract until smooth. Add eggs one at a time, beating well after each addition.
  4. Pour the cream cheese mixture over the crust in the baking dish. Sprinkle blueberries evenly over the top.
  5. Bake for 30-35 minutes or until the center is set.
  6. Remove from the oven and let it cool for 1 hour.
  7. Refrigerate for at least 2 hours before serving. Cut into bars and enjoy!
