Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, pumpkin pie spice, and salt.
  3. Cut the cold butter into small cubes and add it to the dry ingredients. Use your hands or a pastry cutter to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the pumpkin, egg, and heavy cream. Pour the wet ingredients into the dry ingredients and gently mix until just combined.
  5. Turn the dough out onto a lightly floured surface and shape it into a 1-inch thick rectangle. Cut the rectangle into 8 equal-sized triangles.
  6. Transfer the scones to the prepared baking sheet and bake for 18-20 minutes, or until golden brown.
  7. While the scones are baking, prepare the cinnamon icing. In a small bowl, whisk together the powdered sugar, cinnamon, vanilla extract, and milk until smooth.
  8. Once the scones have cooled for a few minutes, drizzle the cinnamon icing over the top.
  9. Allow the icing to set for at least 10 minutes before serving. Enjoy!
