  • 1 cup Pumpkin puree
  • 1/2 cup Unsalted butter, softened
  • 1/2 cup Granulated sugar
  • 1/2 cup Brown sugar
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 2 cups All-purpose flour
  • 1/2 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 1/2 teaspoon Ground nutmeg
  • 1/2 cup Chopped nuts (e.g. walnuts or pecans)
  • 1/2 cup Raisins
  • 1 cup Powdered sugar
  • 2 tablespoon Milk
  • 1/2 teaspoon Ground cinnamon
Instructions
  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract to the bowl and mix well.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chopped nuts and raisins.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are golden brown.
  9. Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes.
  10. Transfer the cookies to a wire rack to cool completely.
  11. In a small bowl, whisk together the powdered sugar, milk, and ground cinnamon to make the cinnamon glaze.
