  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add pumpkin puree, eggs, vanilla extract, and pumpkin pie spice. Mix until well combined.
  4. Pour the filling over the crust in the springform pan. Smooth the top with a spatula.
  5. Bake for 60 minutes or until the center is set. Turn off the oven and let the cheesecake cool in the oven for 1 hour.
  6. Remove the cheesecake from the oven and let it cool completely. Refrigerate for at least 3 hours or overnight.
  7. Before serving, remove the cheesecake from the springform pan. Top with whipped cream and drizzle with caramel sauce.
  8. Slice and serve.
