Ingredients
  • 1 cup Pumpkin puree
  • 1.5 cup All-purpose flour
  • 2 tablespoon Sugar
  • 1 teaspoon Baking powder
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Nutmeg
  • 0.5 teaspoon Salt
  • 0.5 cup Milk
  • 1 large Egg
  • as needed for frying Vegetable oil
  • as needed for dusting Powdered sugar
Instructions
  1. In a large bowl, whisk together the pumpkin puree, flour, sugar, baking powder, cinnamon, nutmeg, salt, milk, and egg until well combined.
  2. Heat vegetable oil in a deep pot or fryer to 350°F (175°C).
  3. Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
  4. Remove the beignets from the oil and drain on a paper towel-lined plate.
  5. Dust the beignets with powdered sugar before serving.
  6. Serve warm and enjoy!
